Creamy Shrimp Penne
1 Box of Penne
1 Jar (5-7oz) of Sun Dried Tomatoes (chopped small)
1 Pound of Shrimp (Peeled, De-veined, Tail-Off)
2-3 Cloves of Garlic (Minced)
1 Tbl Spoon of Olive Oil
2 Cups of Half and Half
2 Cups of Mozzarella
1 Bunch of Fresh Basil (diced)
Directions: 1. Prepare water to boil pasta, heat a large saute pan with the olive oil and add chopped sun dried tomatoes and garlic. Saute for about 5-10 minutes, just so the tomatoes can absorb the garlic flavor.
2. Once water is boiling put pasta in and cook till soft. After the sun dried tomatoes have sauteed, take out of pan, making sure to leave left over oil in the pan. Put in the shrimp and cook till outside is white and then add the half and half and mozzarella. Keep stirring till cheese is melted and sauce starts to thicken (about 10 minutes). Now add the sun dried tomatoes and basil to sauce. If too thick add some of the boiling water from pasta to thin out but add very little at a time. You don’t want the sauce too thin.
3. Once pasta is done, drain and rinse with cold water (to stop cooking) and once you have fully drained all the water add the pasta to the sauce in the pan. Mix well and just let it simmer for a few minutes (salt and pepper to taste). Make sure the sauce is nicely coating the pasta. Add to serving bowl and top with fresh Parmesan.
